Use a sharp knife to make lengthwise cuts on the squid, making the cuts slightly deep in the squid meat in rows all over the squid. Then gently twist the squid so that the cuts spread out like pineapple eyes. Then wash the squid. You will get beautiful pineapple-branded squid, which will make the dish look more appealing. Then wash the lemongrass, galangal, kaffir lime leaves, mint leaves, parsley, garlic, shallots, and fresh chilies. Slice the galangal into slices, cut the lemongrass into sections, and shred the kaffir lime leaves. For the mint leaves, use them for decoration. Cut the onions and tomatoes into pieces. Wash the parsley and cut into sections, set aside.

How to make it

Place a pot with about 1 liter of water on the stove. When the water boils, add the galangal and lemongrass and boil until cooked.

Then add tomatoes, followed by onions. Add coriander, cilantro, lime leaves, and basil leaves for more flavor. Then use a spatula to mix everything together and turn off the stove. Taste and adjust the flavor as you like. You can increase or decrease the amount of seasonings as you like.

Scoop into a bowl and decorate with mint leaves, lime leaves, and coriander. Then pour in chili oil to add color and make it more appetizing. Ready to serve.
