Hello friends, today I went out to do some errands and took the opportunity to stop by the fresh market in Trang town. I stopped to buy some food. Today I thought I would make a chicken curry with pickled bamboo shoots because I had pickled bamboo shoots for several days and gradually used them to make the dish. Today I chose to buy all parts of the chicken to make the curry with bamboo shoots. Just thinking about it is delicious, my friends.
I got a lot of ingredients, basil leaves and various vegetables, which were cheaper than the shops in the village, so I bought some and stored them in the refrigerator to make other dishes as well.
Ingredients and components
● Chicken 500 grams
● Pickled bamboo shoots 200 grams
● Red curry paste 2 tablespoons
● Shrimp paste 1 tablespoon
● Fresh chili as desired
● Kaffir lime leaves 3-4 leaves

● Coconut milk and coconut cream 750 grams

Pickled bamboo shoots should be washed thoroughly with several waters to reduce the saltiness and pickled smell of the bamboo shoots. Then, set aside on a sieve.
Coconut from my own garden. For this menu, I use fresh coconut milk, which will make the curry more fragrant and creamy. It's organic.
Let's start by cutting the chicken into bite-sized pieces, then wash it clean and set aside on a sieve. Cut the chili, lime leaves and basil leaves, wash them clean and set aside. When everything is prepared according to the recipe, let's get started.

Place the pan on the stove, then add oil, followed by chili paste and shrimp paste, stir-fry until fragrant, add a little water, stir-fry until cooked and fragrant again.
Add coconut milk and wait until the coconut milk is well mixed with the curry paste. Then add the chicken and stir-fry until the chicken is almost cooked.
When the chicken is cooked, add the pickled bamboo shoots and season with salt, sugar, black pepper, seasoning powder, fish sauce. Then use a ladle to mix together and wait until it boils, then taste and adjust the taste as you like.
This menu is fragrant. When it comes to the step of adding kaffir lime leaves and basil leaves, use a ladle to submerge the basil and kaffir lime leaves into the soup. It's done.
